Easy Cooking “Spinach Quiche”

Here is a recipe that I have only made a few times. I am sure you may a version of this (or two) laying around. It is delicious and I hope you enjoy it.


1 (9-inch) deep dish pie shell (or, 2 regular pie shells – which I prefer)

1/2 cup of butter

1 small onion

6 slices of bacon (crumpled)

1 (10-ounce) package of frozen chopped spinach (thawed and drained

1 (4.5-ounce) can of mushrooms  (drained)

1 (6-ounce) package herb and garlic feta (crumbled)

1 (8-ounce) package shredded cheddar cheese

Salt and Pepper to Taste


4 eggs (beaten)

1 cup of milk

Salt and Pepper to Taste


  • Preheat oven to 375 degrees.
  • Fry the slices of bacon, crumble, and set aside.
  • In a medium skillet, melt the butter, and sauté the onion in the butter until lightly browned.
  • Next, stir in the spinach, crumbled bacon, mushrooms, feta and 1/2 cup Cheddar cheese. Season with salt and pepper.
  • Spoon this mixture into pie crust(s).
  • Next, in a medium bowl, whisk together the eggs and milk. Season with salt and pepper.
  • Pour the egg mixture into the pastry shell(s) over the top of the spinach mixture, allowing the egg mixture to thoroughly combine with spinach mixture (do not stir).
  • Bake in preheated oven for 15 minutes then sprinkle top(s) with remaining Cheddar cheese and place the quiche back into the oven.
  • Bake an additional 35 to 40 minutes, until set in center.
  • Allow the dish to stand 10 minutes before serving.

If you use the 9” deep dish pie shell, put all the mixture into one pie shell.

However, if you use the 9” regular pie shells, you can divide the mixtures between the two and have two spinach quiches. Put half of the spinach mixture into each shell, top each one with half of the egg and milk mixture, and sprinkle each with half of the remaining cheddar cheese.
